Okra the Greek way

Here is a recipe I love and make quite often, we like Okra and it’s perfect for a meatless day.

We love olives, Feta cheese and nice heavy bread and the meal is complete….Okra is a wonderful vegetable but so misunderstood by many, try this recipe that uses Frozen Okra and you might change your mind.

You will need,

Frozen Okra 2 pouches

5 potatoes peeled and cut in medium size cubes

2 large onions sliced

2 cloves garlic

½ cup olive oil

1 cup prepared tomato sauce the one with the vegetables

I cup plain tomato juice

Water to almost cover the Okra

¼ cup apple cider vinegar

Salt, pepper and a pinch of sugar

Here is how

In a pan Sauté the onions and garlic with the oil for a few minutes

Add the potatoes and continue for a few more minutes

Add the frozen Okra, the rest of the ingredients and cook on medium heat for 20 minutes or until your Okra is done to the touch but not mousy.
