Kagianas Or Strapatsada A summer delight, done with ripe juicy tomatoes and eggs!

A summer recipe when the tomatoes are plenty and delicious especially if you get them right off the vine!An easy recipe to make and it is a traditional Greek little delight!

Kagianas-Strapatsada by Litsa!

  • Here is what you will need for the traditional Greek Kagianas or Strapatsada!
  • Ingredients
  • 5 tomatoes, skin removed and grated
  • 4 eggs lightly beaten
  • 1 tbsp butter and a little olive oil
  • Salt and pepper
  • ½ tsp sugar
  • Feta cheese optional

In a heavy frying pan add tomatoes and cook until all the juices evaporate.

Add butter and oil, eggs and spices

Cook, until you have a nice thick consistency and The eggs, are cooked.

Your Kagianas is ready to be enjoyed with nice bread.

Olives and Feta cheese go very well together.

Litsa’s tip, To remove the skin from the tomato simply immerse the tomato in hot water for a few minutes, but if the tomatoes are nice and ripe you will have no difficulty in removing it!
