Fava-the Greek secret-Litsa
Fava, a winter recipe that is loved by the Greek people!
Fava beans are very delicious, and when you make them the traditional Greek way, they are very nutritious and filling, perfect as a meal, or a dip, to be enjoyed with olive oil and good bread!However Fava beans are difficult to cook, they require too much time, and many steps, to this end we have been using yellow split beans also called Fava, the recipe is called Fava even though we use different peas.
Here is the recipe and in this recipe, I use yellow split peas it is easy!
You will need,
2 cups yellow split peas rinsed
¼ cup olive oil
1 onion
2 cloves garlic
Salt, pepper and a touch of sugar
Vegetable stock or chicken stock
Here is how to make the famous Fava!
In a pot add the oil the chopped onion and garlic, sauté for a few minutes until they become soft, add the peas and season with the seasonings, add the stock making sure it covers the peas and then some.
Cook in moderate heat for 15-20 minutes.
Remove from the heat and purée.
Place on a nice platter and it is ready to use!
As a topping, I like to use sauté onions and mushrooms, in a little butter and olive oil and it is an addition I like. Adding a little olive oil is a must!
If you like to go the Traditional Greek way, for a topping you will use olive oil, chopped onion, oregano, and olives!
A little reminder, Fava is thirsty and loves olive oil, use it with love and don’t hesitate!
